Honey Yogurt Drizzel

​Ingredients

  • 1 cup unsweetened vanilla yogurt

  • 1/4 tsp salt

  • 1/4 cup honey

Directions

  • Combine in a bowl, mix thoroughly, and serve

Pumpkin Hummus

​Ingredients

  • 1 package prepared store bought hummus

  • 12oz canned pumpkin puree

  • 1 tsp cumin

  • 1 tsp cinnamon 

  • pinch of nutmeg

  • Combine in a bowl, mix thoroughly, and serve

Matcha Popcorn

​Ingredients

  • 4 cups prepared popcorn

  • 1/2 cup extra virgin olive oil 

  • 2 tbsp. of matcha powder

Directions​

  • In a sauté pan gently warm oil and matcha power until matcha is absorbed (approx. 2min)

  • In a bowl add popcorn, pour oil/matcha mixture and toss to coat

  • Season to taste

Spiced Pumpkin Seeds

​Ingredients

  • 1 lb. shelled raw pumpkin seeds

  • 1 egg white

  • 1/2 tsp cumin

  • 1/2 tsp coriander

  • 1/2 tsp all spice

  • 1/2 tsp powdered ginger

  • 1/2 tsp salt 

  • 1/2 tsp pepper

Directions​

  • Whip egg white until very frothy

  • In a bowl combine all ingredients, gently mix until seeds are covered

  • Line a flat baking sheet with parchment paper and spray with cooking spray

  • Lay pumpkin seeds in a single layer

  • Bake at 250 degrees Fahrenheit for 1 hour, stirring every 20min

  • Cool and serve

Lemon Chicken Skewers with Feta & Roasted Tomatoes

​Ingredients

  • 1 lb. boneless chicken breast, cut into 1inch cubes

  • Approx. 12 grape or cherry tomatoes

  • Crumbled feta cheese 

Marinade Ingredients

  • 1/2 cup olive oil

  • 1/4 cup lemon juice

  • 1 tbsp. chopped parsley

  • 1 tbsp. chopped garlic

  • 1 tsp black pepper

Directions​

  • In a bowl combine marinade ingredients, add chicken cubes

  • Cover and marinate in fridge for 24 hours

  • Remove chicken from marinade

  • Add one piece of chicken and one tomato to each 4in wooden skewer

  • Season with salt

  • Roast at 400 degrees Fahrenheit for approx. 8-10min (until chicken is cooked)

  • Sprinkle with crumbled feta

Chipotle BBQ Turkey Meatballs

​Ingredients

  • 1 lb. ground turkey

  • 1 egg

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp chipotle chili powder

  • 1 tsp cumin

  • 1 tbsp. black pepper

  • 2 tbsp.  salt

  • 1/4 cup chopped cilantro

Directions​

  • In a bowl combine all ingredients and mix by hand

  • Form into 1 inch ball

  • Bake at 350 degrees Fahrenheit for 10min

  • Serve with your favorite BBQ sauce
